Daté Seven is a collaboraive project from seven saké breweries of Miyagi Prefecture: Hakurakusei, Urakasumi, Katsuyama, Suminoe, Yamawa, Koganesawa and Hari no Tsuru. For Season II, Episode 2 Yamawa is the lead, whith other brewers taking of a specific step of the process. The clean and elegant sake with beautiful acidity and delicate umami embodies the Yamawa motto that "Simple is Best".
